I made this recipe as cupcakes for a picnic and they were a HUGE HIT. I was worried about the cream cheese frosting melting in 95 degree heat so I made a stabilized whipped cream frosting and folded in the cream cheese. I've now just made it again but this time as a savory cornbread with sauteed ramps and corn folded in to bring to a party tomorrow. This will be my go-to cornbread recipe from now on!

Can I use a 9 inch spring form round pan?

You could! It might take slightly longer to bake.

Can I use white cornmeal? I can’t find yellow. Only the self-rising corn meal mix

I wouldn't use self-rising mix in this recipe since there's baking powder and baking soda in the recipe and I'm not sure what or how much leavener is in the mix. White is okay as long as it's medium ground.
