When I posted my Aperol Spritz Rainbow Cookies on Instagram and TikTok earlier this month, I asked if the audience wanted other booze-inspired rainbow cookies, such as espresso martini or negroni. The response was an overwhelming yes, and you guys had so many other good ideas: limoncello, paper plane, hugo spritz… I could go on.

I topped my cookies with Valrohna chocolate “crunchy pearls,” which are basically chocolate covered rice crisp balls.

The espresso martini variation seemed extremely primed for New Years Eve, so I decided to put a rush order on these and get one last recipe in under the wire for this year. I hope you have time to make them — and if not, Valentines Day is just around the corner.

A variation on this batch where I subbed espresso chocolate ganache for the filling. I decided it tilted the cookie too much into chocolate territory and overpowered the coffee taste. But the choice off white or dark chocolate for the topping is up to you.
