I felt like it might help you all if I resurfaced old ones or ones you may have missed while we’re all gaming out our Friendsgiving and Thanksgiving menus/offerings. 4-Cheese Mac & Cheese


What I wanted: a creamy cheese sauce, baked under a blanked of crusty cheesy breadcrumbs. That was the prompt. And that’s what we got — but read the whole intro to learn about the common pitfalls and pro-tips so you can avoid dry, soupy, grainy and gritty, curdled or BLAND mac and cheese.
And by the way, it’s a 4-cheese mac and cheese thanks to the parmesan-panko breadcrumbs, plus cheddar, fontina and gruyere in the ultra-luxurious sauce.
Everything Bagel Pepper Jelly Puffs


Judges, today I have prepared for you puff pastry cases with an everything bagel seasoning rim, filled with a scallion cream cheese/goat cheese filling and topped with pepper jelly. I really wasn’t prepared to realize, upon first tasting, that these are *so* evocative of crab rangoon. The pepper jelly hits the same notes as a sweet chili sauce, and then it mixes with the cream cheese and the crispiness of the shell.
